KFC Famous Bowl Casserole

All the flavors of a KFC Famous Bowl in a family-sized casserole — creamy mashed potatoes, sweet corn, crispy popcorn chicken, rich chicken gravy, and melted cheddar all baked together. Ready in 30 minutes!

Ingredients

  • 1 bag (22 oz) frozen popcorn chicken do NOT thaw — add directly from frozen
  • 2 cups frozen corn thawed and drained, or canned corn drained
  • 3 cups mashed potatoes instant prepared or homemade, well-seasoned
  • 1 can (10.5 oz) chicken gravy warmed
  • 2 cups shredded cheddar cheese or three-cheese blend
  • salt, pepper, and garlic powder for the mashed potatoes

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13 baking dish. Prepare mashed potatoes if using instant and season generously with salt, pepper, and garlic powder.
  • Spread mashed potatoes evenly across the bottom of the prepared baking dish as a thick even layer.
  • Sprinkle corn evenly over the mashed potatoes. Arrange frozen popcorn chicken in a single layer over the corn. Do NOT thaw the chicken first.
  • Warm chicken gravy and pour evenly over the entire casserole, coating everything and filling the spaces between chicken pieces.
  • Sprinkle shredded cheddar cheese generously over the entire surface.
  • Bake at 350°F for 25 to 30 minutes until cheese is melted and bubbly and chicken is crispy. Optional but recommended: broil on HIGH for 3 to 5 minutes for a golden-brown cheese top. Watch closely.
  • Rest 3 to 4 minutes. Scoop into deep bowls making sure everyone gets all the layers. Serve with biscuits and coleslaw.

Notes

Keep popcorn chicken frozen — frozen crisps up much better than thawed.
Season mashed potatoes generously — they are the flavor foundation.
Warm gravy before pouring — distributes more evenly.
Broil at the end — gives cheese a gorgeous golden-brown top.
Make ahead: Assemble night before, refrigerate, bake next day adding 5 to 10 extra minutes.
